Oats Idli by Shalu Garg

Shalu is a full time mother to Aayush and Shivaansh. Shalu is one of those lucky ones who are living their dream life. Being a homemaker was always one of her dreams and she has accomplished it successfully. She is a quick fix cook who can prepare something really filling and yummy just in few minutes. It comes to her naturally. By the time, somebody will think of making a dish and what ingredients it needs to have, Shalu will present the dish with whatever she has available at home. Her kids can never go hungry because she is never in dearth of ideas for cooking tasty yet healthy foods. Recently she also won a small competition in her locality for being the best the mommy cook.
Recipe

Mix oats, sooji and curd in a bowl.
Add carrots and corn and give it good mix without adding any water.
Add a pinch of baking soda and water.
Beat the batter nicely till you get the required consistency.
Grease the Idli molds and pour the batter immediately and steam for 12-14 mins.
In the other pan, take 2 tbsp oil, add rai (black mustard seeds), a pinch of hing (asafetida) and pour well steamed Idlis in pan.
Add little haldi, chilli powder, amchur (dry mango powder) and salt to taste.
Saute well and garnish it with fresh coriander leaves.
Food Shood Tip: When radishes, celery, or carrots have lost their crunch, simply pop them in a bowl of iced water along with a slice of raw potato and watch the limp vegetables freshen up right before your eyes.
