Instant Jain Handva and Minestrone Soup by Khushbu Ambavat

Khushbu is a dedicated full-time mum to 2 year old Dhyanam. She also plays major role in managing her 2 year old son’s career. Yes, her son has already appeared in two commercials and few highly popular memes too. Khushbu belongs to the Jain community and her cooking skills are known by family and friends. She knows the secret ingredient of how to make the most yummiest food without using onion and garlic. Her recipes are never heard of but when you taste them, you will fall in love with the food. She can give a very serious competition to all the desserts seen in Shipla Shetty’s Sunday Binge. Not only cooking, she is also gifted with the art of presentation of food. Khushbu has not learnt it from any formal cooking classes. She has just seen the food tradition in her family and it comes to her effortlessly. Dhyanam is going to be one kid in the school, whose lunch box will be eyed by his friends.
Recipe of Jain Instant Hanva

Mix curd with water to make buttermilk.
Heat buttermilk till steaming hot and let it cool down.
Then add all the veggies and spices and mix well to a semi solid consistency.
Add dry chilly powder as per the taste required by your child. Add a pinch of soda for softness.
Heat 1 tsp oil in a non stick pan with jeera. As it cracks pour the batter with a ladle and spread up to 5 inches into a circle.
Let it cook for 5 mins on slow flame. Turn side and allow to cook for another 5 mins.
Handwa is ready to eat with crispy coating and soft layer inside. Serve with ketchup or green chutney.
P.S - You can add as many veggies in the batter that your child likes. This tasty instant Handwa can be given to 1 year and above.
Recipe for Minestrone Soup

Take Paneer water in a container.
Add tomato and bottle gourd.
Add a pinch of black pepper and salt too.
Boil on medium flame for 10 mins.
Let it cool down and then grind the soup, strain it.
On the other stove, take a pan with 1 tsp oil and saute cabbage & capsicum with salt.
When serving garnish with cabbage, capsicum, sevaiya in each bowl of soup.
P.S - When making paneer for your baby with Milk, the water strained from Paneer is paneer water which is used in the above recipe. This water has proteins & calcium and veggies make the soup healthier. Its a delicious soup like a treat for your kid.
Food Shood Tip: To ripen fruit overnight, place it in a paper bag with an apple. Apples release ethylene gas that hastens the maturing process of other fruits.

Recipe for Malai Sandwich

Spread the malai on the slices.
Put the onion, cucumber pieces, oregano and chilli flakes with a little salt. Any other veg can be added which you want to sneak in this sandwich.
On the other slice of bread put a layer of mayonnaise or malai (as per your taste).
Roast the sandwich until it turns golden brown both sides and relish with sauce and green chutney.
