Vibhuti is an IT Professional and mom to 7 yr old Shubhu. Her busy work schedule doesn't give her much time to do lot of her experiments with cooking. But she never misses a chance to learn a new recipe from a colleague or a friend and try it out at least once on her own. Vibhuti is not at all shy in accepting the fact that she is not a great cook but still manages a very large part of the family meals. But like all other mothers, she pushes herself for her kid and tries out different recipes, whenever she gets time. This Dhokla Idli recipe she learnt from her friend at her workplace, Alka, who is an amazing, as shared by Vibhuti.




Recipe

  1. Take a bowl and mix sooji, besan and curd until no lumps remain.

  2. Add salt and turmeric and leave the batter for 1 hour to ferment. (You can also prepare this paste at night and put it in the refrigerator after fermentation).

  3. Add finely chopped vegetables of your baby's choice and a pinch of Eno to the batter.

  4. Mix well all the added ingredients.

  5. Take an Idli maker pot and coat its molds with oil.

  6. Pour the batter in the molds. Avoid filling the molds completely.

  7. Steam the Idlis for approx. 10 min.

  8. Take a Fry Pan, add one spoon oil, heat it for some time.

  9. Add mustard seeds and curry leaves.

  10. Fry the piping hot Idlis from the pot and serve them hot with sauce or green chutney.


Food Shood Tip: A bay leaf slipped into a container of flour, pasta, or rice will help repel bugs.

Spinach Corn Pulao by Deepti Garg

Deepti is a physiotherapist and mum to Dev and Diya. She has recently started her practice as a physiotherapist. Deepti is one of those mothers for whose cooking not only her kids but their friends also wait because she cooks such delectable food. I can easily relate to Deepti's home to those episodes in Tom & Jerry cartoon, where someone was cooking and smell even travels outside the home and Tom or Jerry used to follow just the smell to reach the home. She loves cooking vegetarian recipes. Deepti's some savories can also beat Haldiram's snacks.





Recipe

  1. Wash rice, add water, oil and a pinch of salt in a pan and cook it for 5 minutes by covering a lid.

  2. Take a big plate and spread the half cooked rice nicely and let it cool.

  3. In a separate pan, add butter, onion, capsicum, corn and cook until vegetables get soft.

  4. Add green chilies, spinach and cook for 5-7 minutes.

  5. Add the rice, black pepper, a pinch of salt and sugar, oregano, chiili flakes, cream and half cup of cheese.

  6. Close the lid and cook the dish for 10-12 minutes.

  7. Serve it hot on the plate with half a cup of cheese on top of it.
